Ingredients

for the filling

  • Strawberries – Fresh or frozen
  • Honey
  • Cornstarch

For the crisp topping

  • Old fashioned oats
  • Whole wheat flour
  • Brown sugar
  • Butter, melted
  • Cinnamon

Directions

Step 1:
In a large bowl, add cornstarch. Then add strawberries and rhubarb to bowl and toss to coat. Stir honey into fruit mixture.

In a small bowl, combine the oats, brown sugar, melted butter, flour, and cinnamon until the mixture resembles coarse crumbs.

  • ¼ C cornstarch
  • 3 C sliced strawberries
  • 3 C sliced rhubarb
  • ¾ C honey
  • 1 C old fashioned oats
  • C brown sugar
  • ½ C butter, melted
  • C whole wheat flour
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 350°.
    In a large bowl, add cornstarch. Then add strawberries and rhubarb to bowl and toss to coat. Stir honey into fruit mixture.
  • In a small bowl, combine the oats, brown sugar, melted butter, flour, and cinnamon until the mixture resembles coarse crumbs.
  • Spoon fruit mixture into a greased 8″ square baking dish. Sprinkle the crisp topping over the fruit.
  • Bake at 350º for 45 minutes or until fruit is tender and crisp is golden brown.

Notes
