  • No jarred sauced here! This is a completely from-scratch sauce, meaning no preservatives or other processed ingredients like gums or modified food starch.
  • This recipe uses real broth, which means that you can use nutritious bone broth and control the sodium level.
  • Cream cheese is used in place of heavy cream for fewer calories, less saturated fat, and more protein.
  • For pasta, we used 100% whole-grain spaghetti noodles for a lower glycemic index, added fiber, and more B vitamins and minerals.

  • Pasta of choice – Traditional Alfredo uses fettuccine noodles. We used whole-grain spaghetti noodles instead. Penne is another good pasta option, or get adventurous and try it with spaghetti squash!
  • Oil – A small amount of oil is used for pan-frying the chicken. Canola, vegetable, or avocado all work well.
  • Chicken breasts, cut into small strips – This recipe calls for cutting the chicken before frying. This adds so much flavor to the chicken because all sides are covered with the golden-brown crust.
  • Butter
  • Minced garlic
  • Sage
  • Flour
  • Chicken broth – I’ve taken shortcuts before and used bouillon, which works just fine. But this time we used homemade chicken bone broth. So much more flavor without relying on salt for taste.
  • Milk – For an extra creamy sauce, use whole milk. Skim or non-dairy milk will also work as well.
  • Cream cheese, cubed – This recipe uses cream cheese in place of heavy cream. I often swap cream cheese for cream in soups, pasta, and other savory side dishes because it is much cheaper and has a longer shelf life, so I can always have some on hand. Just be sure that the cream cheese is fairly fresh and has never been frozen. Otherwise, the cream cheese may not melt smoothly.
  • Parmesan cheese
  • Salt, pepper, parsley

Directions

Step 1:
Cook pasta according to directions. Drain and set aside.

Step 2:
Heat oil in skillet over medium heat. Add chicken; cover and cook for 5 minutes undisturbed. Then uncover and cook until golden-brown, moving around pan to brown on all sides. This method allows the chicken to cook fully while keeping it moist and juicy and adding maximum flavor with a seared crust. (Don’t worry if there is a little bit of stickage in this step. We will deglaze the pan and make sure every bit of the delicious flavor is used!)

Step 3:
Remove chicken from the skillet and set aside. Add butter to skillet and melt. Whisk garlic and sage into the melted butter. Then add flour and whisk to form a roux. Cook for about a minute until a bubbly paste forms.

Then add chicken broth to the hot skillet and whisk to deglaze the bottom of the pan. This adds a ton of flavor by releasing the caramelized pieces of chicken stuck to the bottom.

Turn down heat slightly and add milk, whisking continuously. The mixture should begin to thicken. Add cream cheese and parmesan cheese and simmer until melted and smooth.

Add pasta and chicken back into pasta and stir to coat in sauce. Season with salt, pepper, and parsley to taste.
