A few months after my husband and I were married, my husband came down with a cold. Naturally, he requested chicken noodle soup. I didn’t have anything on hand, but in his sweetness, he told me it was okay and he would just pick some up at the store. Well, of course he came home with a pack of instant stick-in-the-microwave foam cups with a little bit of broth and noodles, but mostly salt, preservatives, and who knows what other chemicals.

I realized I needed to come up with a solution for keeping chicken noodle soup on hand that could be pulled out on sick days and that would actually be nutritious, which is how this freezer chicken noodle soup was born. How to Get Flavorful Broth

The nice thing about making your own chicken noodle soup is you get to choose the ingredients! If you are pinched on time, you can absolutely buy chicken broth in the carton. But, if you want maximum flavor, I encourage you to try making your own! With just chicken, kitchen scraps, water, and a few other basic ingredients, you can tap into homemade broth with rich chicken and hearty vegetable flavor. How to Freeze Chicken Noodle Soup

The biggest concern when it comes to freezing chicken noodle soup is the texture of the noodles. Noodles have the tendency to absorb some of the broth in the soup, which can lead to them becoming soggy.
To avoid this, only boil the noodles in the soup for five minutes and promptly remove pot from heat. Using whole wheat noodles also tends to help because the whole grain has a slightly chewier texture to begin with.
Pour soup into freezer-safe plastic or glass containers, and be sure to leave a few inches at the top to leave room for the broth to expand once frozen.

How to Reheat Frozen Chicken Noodle Soup

Defrost the soup in the fridge overnight, or soak it in a bowl of hot water for about an hour. Then pour it into a saucepan and heat it over med-low until the soup is heated all the way through. Avoid bringing it to a rapid boil or overcooking as this can cause the noodles to become mushy.

  • Chicken breast, cooked – This is the perfect way to use up extra breast from a whole roasted chicken.
  • Butter
  • Carrots
  • Celery
  • Onion
  • Garlic cloves
  • Chicken stock or bone broth
  • Whole wheat noodles – Whole wheat egg noodles, rotini, or spaghetti are all good options. Since whole wheat noodles can be harder to find, use what you prefer and what is available to you. We used spaghetti noodles, broken into quarters.
  • Thyme
  • Rosemary
  • Parsley

Directions

Step 1:
In a Dutch oven or large pot, add 2 T butter over medium heat. Sauté carrots, celery, onions, and garlic for about 5 minutes until the vegetables start to soften.

Step 2:
Pour in 8 C chicken broth. Add chicken, thyme, rosemary, and parsley.

Step 3:
Add noodles and bring to a gentle boil. If eating right away, boil for 10 minutes. If you are preparing in advance or planning to freeze, only cook noodles for 5 minutes.
