Best Steak Marinade for a Mouthwatering Steak

This savory and flavorful marinade will bring the best mouthwatering steak to your table this summer! Really, this marinade is great on any cut of red meat; I’ve tried it on pork and even venison. It packs a ton a of taste and complements the flavor of the meat in just the right way without overloading it with spices. A few minutes of prep is all you need to whip this up and take your steak to the next level.

Before we dive in, let’s go over some marinade 101.

What makes a good steak marinade?

Most good marinades are made up of three components: an acid, an oil, and flavoring. This recipe uses apple cider vinegar as an acid to make your meat extra tender. Olive oil helps to retain moisture, enhance flavor, and form a nice outer crust when cooking. And a blend of soy sauce, Worcestershire sauce, and herbs adds delicious flavor.

How long should I marinade meat for?

Minimum time is 4 hours and can be left up to 24 hours. The longer you are able to marinate the meat, the more the flavor will be absorbed into the meat. However, if you marinate the meat too long, the acidic ingredients may start to break down the fibers of the meat and leave an unappealing, mushy texture.

How should I cook the steak after it’s done marinating?

The grill is typically our top preference. However, summer is a short season for us and the grill isn’t always an option. We enjoy steak all year round by breaking out our cast iron pan! The cast iron adds a good sear to the outside that is a next-best option to the grill.

  • Grill or cast iron pan
  • Measuring cup, spoons, and bowl
  • Large glass dish or ziplock bag
  • Meat thermometer – I am a huge proponent of using a meat thermometer to temp your meat for doneness.

  • Soy sauce
  • Olive oil – Extra virgin is a great, healthy choice!
  • Lemon juice
  • Worcestershire sauce
  • Minced garlic
  • Dried basil
  • Parsley
  • Pepper

Directions

Step 1:
Measure all steak marinade ingredients into a bowl and stir to combine.

Step 2:
Pour steak marinade over meat, cover, and refrigerate for a minimum of 4 hours up to 24 hours.

Step 3:
Bring the steak to room temperature by removing from the fridge about 20 minutes before cooking. This will help the steak to cook more evenly.
Cook the steak over medium-high heat for 9-15 minutes, flipping halfway through. Temp the steak after it’s nicely seared on both sides. For a beef steak with medium doneness, temp to 145°, or for well-done, temp to 160°. Let rest for a few minutes after removing from the grill to retain juices.
